hello everyone! This is the third edition of staff-selected sake! ☺️
This is R, the staff in charge of Japanese sake!
My hobbies are traveling and cooking, I like traveling and cooking, I like to visit sake breweries and think about pairing sake and food🍶🍽
This time's carefully selected sake is from Imanishi Sake Brewery in Miwa, Nara Prefecture.
It is "Mimuro Cedar Kioke Bodaimoto"!
The taste created by the revival of super ancient techniques is truly unknown! 🤭
It's a flavor I've never experienced before, but it doesn't feel old-fashioned at all, and it's rather modern!
Recently, there has been an increase in sake with a flavor similar to that of white wine, but to exaggerate, this is reminiscent of red wine.By all means, it is a gem that you should try together with our recommended menu [Wagyu beef shoulder loin]! !
Bean paste goes well with sweetness, so you can enjoy the combination with "red bean dumplings".
Well, let me interject a little bit here.
If you're a sake drinker, I'm sure you've seen these big green or brown spheres hanging in front of liquor stores and breweries. It is called "Sugitama", and it has the meaning of wishing "to make delicious sake", and also represents the cycle in which autumn sake is shipped when the green sugidama gradually withers and turns brown in the season of new sake. There is atmosphere
This sugidama is said to have originated from Miwa Omiwa Shrine in Nara Prefecture.By the way, Nara Prefecture is also the birthplace of sake.
The "Kioke Bodaimoto" released this time seems to be the crystallization of technology and history that was finally released after many years of planning based on the oldest manufacturing method! Please give it a try!
