Kozaemon is a long-established sake brewery with over 300 years of history.
We use quite a variety of rice suitable for sake brewing (Bizen Omachi, Banshu Yamada Nishiki, Miyama Nishiki, etc.), but this time we use Hattan No. 35 Junmai Ginjo.
Hattan 35 is the father of Hattan Nishiki.
